My New Favourite DIY Salad: Spinach, Apple, Goat Cheese & Pecan

Maybe you’re like me and you’re continually working on cutting out junk food in your diet. But are you making sure to replace it with healthy food full of nutrients like fruits and veggies?! I find that’s often my problem when I’m being mindful of my junk food intake – I delete the bad, but then I don’t eat enough of the GOOD. This crazy-good spinach salad has been life changing over the past few weeks. It’s a delicious combo that’s easy to make at home for lunch, and I find it very satisfying. It’s packed full of healthy stuff like dark leafy greens, healthy fats and a lot of flavour. Give it a try and tell me what you think! Here’s my newest favourite salad – spinach, apple, goat cheese and pecan salad with raspberry vinaigrette. YUM!

Even Baby B will eat this salad! I think she enjoys the slight sweetness mixed with all of the textures just as much as I do!

Spinach Salad with Apples, Goat Cheese, Pecans and Raspberry Vinaigrette

This healthy salad is full of texture and flavour. It’s a perfect lunch time snack!
Ingredients
  • baby spinach
  • goat cheese
  • Gala apple
  • raspberry vinaigrette
  • whole or chopped pecans
Instructions
  1. Place spinach in bowl and crumble goat cheese over top.
  2. Chop apple into bite sized pieces, and spread over salad.
  3. Sprinkle pecans over salad, and finish with a light amount of raspberry vinaigrette.
